What is Batchoy?
Batchoy is a soup dish composed of sliced pork, pig’s innards, meat broth, vegetables, egg and noodles. This dish originated from the district of La Paz in Iloilo City — in the island of Panay. Throughout the years, batchoy gained popularity and has been a favorite soup dish of every local and foreign people who visit Philippines. The noodles used in the recipe refers to fresh egg noodles. This type of noodle is often used in soup dishes. Since the noodles are fresh, it requires minimal cooking time. Sometimes, pouring hot broth over the noodles is enough to cook it.

You have all the choices in front of you. It is a buffet of essential ingredients that will assuredly brand your batchoy according to your taste. There are four selections that you may add to your noodle soup such as beef stripe, beef liver, boiled chicken meat, and Chicharon (crashed pork cracklings). Also, green onions, fried onion and garlic for condiments. The soup is a mixture of chicken and beef broth.
You can choose from three kinds of noodles such as Phad thai noodles which is think and greasy, Sotanghon noodle which is soft and tinny, Egg noodles which is tasty and more likely to be the typical batchoy. You can add some garlic oil and sesame oil to adjust the taste according to your perception. The food is all under your control, you can eat as many as you want.
